I deliver engaging and informative live butchery demonstrations for food festivals, trade shows, industry events, and public audiences. Whether working on a main stage or in a more intimate setting, my focus is on giving audiences a clear insight into butchery techniques, along with valuable information on different breeds, cuts, and cooking methods in a way that is easy to understand and enjoyable to watch.
Live demonstrations are particularly well suited to large carcass breakdowns, such as whole lamb, sides of pork, or beef roastings and quarters. I break these down efficiently and safely, showcasing technical skill, knife control, and workflow in a way that both captivates and educates a live audience.
I enjoy working alongside chefs who live-fire cook the meat as the carcass is being broken down. This creates a dynamic, collaborative experience that allows audiences to see the full journey from raw product to finished dish in real time.
